Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Prepare the two marinades. In one small bowl, whisk together all the ingredients for the spicy jalapeño-lime marinade: minced jalapeños, lime juice, olive oil, minced garlic, cumin, smoked paprika, sea salt, and black pepper. In a separate small bowl, whisk together the ingredients for the mild lime marinade: lime juice, olive oil, minced garlic, cumin, smoked paprika, sea salt, and black pepper.

Place the cauliflower steaks on the prepared baking sheet. Brush two of the steaks generously on both sides with the spicy jalapeño-lime marinade. Brush the remaining two steaks generously on both sides with the mild lime marinade.

Roast the cauliflower steaks for 20-25 minutes, carefully flipping them halfway through, until they are tender and have slightly caramelized edges. The exact time will depend on the thickness of your steaks.

Once tender, remove the cauliflower steaks from the oven. If desired, garnish the spicy steaks with a sprinkle of cilantro and the mild steaks with a different garnish or none at all. Serve immediately with lime wedges on the side.
