Preheat your oven to 400°F. Line a large baking sheet with parchment paper.

On the prepared baking sheet, drizzle the honey or golden syrup into four separate wavy patterns, leaving enough space between each for a pastry. Place one pat of butter on top of each syrup drizzle.

Generously sprinkle 1 tablespoon of light brown sugar over each butter pat, followed by a light dusting of ground cinnamon.

Arrange the thinly sliced red apples in an overlapping, circular pattern over each butter and spice mixture, creating a neat base for each pastry.

Carefully place one square of puff pastry over each apple arrangement, gently pressing down around the edges to enclose the apples and caramel base.

Brush the top of each puff pastry square with the beaten egg wash. This will help achieve a golden-brown finish.

Bake for 20-25 minutes, or until the puff pastry is puffed and golden brown, and the caramel mixture underneath is bubbly and caramelized around the edges.

Remove from the oven and let cool on the baking sheet for 5 minutes. While still warm, carefully slide a spatula under each pastry and invert it onto a serving plate, revealing the caramelized apple slices on top. Serve warm.
