Roast the cherry tomatoes in the preheated oven for about 20 minutes, or until they are shriveled and softened. Remove from the oven and let them cool down for approximately 10-15 minutes.

Once the roasted tomatoes have cooled, transfer them to a blender. Add 2 cups of cooked and cooled or canned and drained chickpeas, 1/4 cup of cashew butter (or tahini or vegan cheese), 1 to 2 teaspoons of chilli powder, and 1 tablespoon of maple syrup.

Top the hummus-covered toasts with caramelized onions. For extra flavor and texture, you can add a few more of the reserved roasted cherry tomatoes from the initial batch.
