Place the 400g milk chocolate and 200g dark chocolate into a heatproof bowl.

In a saucepan, heat the 200ml heavy cream and 100ml milk until hot but not boiling.

Pour the hot cream and milk mixture over the chocolates in the bowl. Add the 200g butter to the chocolate mixture.

Stir the mixture thoroughly until all ingredients are melted and combined into a smooth, glossy ganache. Set the prepared ganache aside to cool slightly.

In a large mixing bowl, crack the 3 eggs. Add the 100g sugar to the eggs.

Whisk the eggs and sugar together until the mixture becomes light and fluffy.

Add the 100ml water and 1 teaspoon vanilla extract to the egg and sugar mixture. Mix until all wet ingredients are well combined.

Sift the 200g cocoa powder, 200g flour, and 1 teaspoon baking powder into the wet mixture.

Mix all the dry and wet ingredients together until a smooth cake batter is formed. Be careful not to overmix.

Preheat your oven to 180°C (350°F).

Pour the cake batter into a round baking pan that has been lined with parchment paper.

Bake the cake in the preheated oven for 45 minutes, or until a wooden skewer inserted into the center comes out clean.

Once the cake is baked, remove it from the oven and let it cool completely on a wire rack. This may take at least 1 hour.

Once the cake has cooled down completely, carefully slice it horizontally into three even layers.

Place the first cake layer onto a serving plate or cake stand. Spread an even layer of the prepared ganache generously over the first cake layer.

Carefully place the second cake layer on top of the ganache. Spread another generous layer of ganache over the second cake layer.

Place the third and final cake layer on top. Using an offset spatula or knife, cover the entire cake (top and sides) with the remaining ganache, smoothing it out for a neat finish.

To decorate, create a decorative pattern on the top surface of the cake using a fork or a cake comb tool, if desired.
