Preheat oven to 375°F. Lightly grease a baking sheet or line with parchment paper.

In a medium bowl, toss the cut chicken pieces with olive oil, smoked paprika, garlic powder, onion powder, ground cumin, dried oregano, cayenne pepper, salt, and black pepper until the chicken is evenly coated.

Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove from heat.

Warm the corn tortillas. You can do this by wrapping them in a damp paper towel and microwaving for 30-60 seconds, or by heating them in a dry skillet for 15-20 seconds per side until pliable.

To assemble the stackers, place one warm tortilla on the prepared baking sheet. Sprinkle with about 2 tablespoons of shredded cheese, then top with a portion of the cooked chicken. Place another tortilla on top, then sprinkle with another 2 tablespoons of cheese.

Repeat with the remaining tortillas, chicken, and cheese, creating four stacks in total. You will have two tortillas per stack, with cheese in between and on top of the chicken layer.

Bake for 8-10 minutes, or until the cheese is melted and bubbly and the stackers are heated through.

While the stackers are baking, prepare your toppings: dice the avocado, finely dice the red onion, and chop the fresh cilantro.

Carefully remove the stackers from the oven. Top each stacker with diced avocado, red onion, and fresh cilantro. Serve immediately with a dollop of plain Greek yogurt and a lime wedge.
