In a medium bowl, combine the sliced flank steak with 1 tablespoon soy sauce, cornstarch, sesame oil, and black pepper. Mix well to coat the beef. Cover and marinate in the refrigerator for at least 30 minutes.

Push the garlic and ginger to one side of the wok. Pour the beaten eggs into the empty space and scramble until just set, about 1 minute. Break the eggs into smaller pieces.

Add the cold day-old rice to the wok. Break up any clumps with a spatula. Stir-fry for 3-5 minutes, ensuring the rice is heated through and slightly toasted.

Return the cooked beef and broccoli to the wok with the rice. Add 2 tablespoons of soy sauce, oyster sauce (if using), and sugar. Stir well to combine all ingredients and coat the rice evenly. Continue to stir-fry for another 1-2 minutes.
