Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while preheating.

In a large mixing bowl, combine the sliced peaches, 2 tablespoons of melted butter, 1/2 cup packed light brown sugar, ground cinnamon, freshly grated nutmeg, vanilla extract, cornstarch, and the juice from 1/2 a lemon. Mix thoroughly with a spatula until the peaches are evenly coated.

Unroll the pizza dough onto a lightly floured surface or directly onto a piece of parchment paper if using a baking sheet. Brush the edges of the pizza dough with 1 tablespoon of melted butter.

Spoon the prepared peach filling evenly over the pizza dough, leaving a 1-inch border around the edges for the crust.

In a separate medium bowl, combine 1/2 cup packed light brown sugar, 1/2 cup all-purpose flour, and the cold, cubed butter. Use your hands to mix and crumble these ingredients together until a coarse, crumbly topping forms.

Generously sprinkle the crumble topping over the peach filling on the pizza.

Carefully transfer the pizza to the preheated oven (either onto the pizza stone or baking sheet). Bake for 20-25 minutes, or until the crust is golden brown, the peaches are bubbly, and the crumble topping is lightly browned.

Remove the peach cobbler pizza from the oven. Let it cool for 5-10 minutes before slicing and serving. Optionally, serve warm with a scoop of vanilla ice cream.
