Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions, typically 10-12 minutes, until al dente.

While the pasta cooks, prepare the sauce. In a small bowl or measuring cup, combine 2 tablespoons of chili oil, 2 tablespoons of honey, 2 tablespoons of soy sauce, and a splash of hot pasta water from the cooking spaghetti. Mix well and set aside.

In a large pan, melt 1 1/2 tablespoons of butter over medium heat.

Add the 5 minced garlic cloves to the pan and cook until fragrant, about 30 seconds to 1 minute, being careful not to burn the garlic.

Pour the prepared sauce mixture into the pan with the garlic and cook for 1 minute, allowing the flavors to meld.

Drain the cooked spaghetti, reserving a little extra pasta water if needed. Add the spaghetti directly to the pan with the sauce and toss thoroughly to coat every strand evenly.

Stir in the 40 grams of grated Parmesan cheese and 10 grams of minced chives. Give it a final good mix until everything is well combined and the cheese has melted into the sauce.

Serve immediately. For an optional richer and creamier texture, garnish each serving with an egg yolk, additional Parmesan cheese, and a drizzle of chili oil. Enjoy!
