Prepare the Chicken: Slice each chicken breast in half horizontally to create thinner cutlets. Drizzle 1 tablespoon of olive oil over the chicken. Season both sides of the chicken with 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon onion powder, and 1 teaspoon Italian seasoning.

Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken cutlets and cook for 4-6 minutes per side, or until cooked through and nicely browned. Remove the chicken from the pan and let it rest on a cutting board for 5 minutes. Once slightly cooled, dice the chicken into bite-sized pieces.

Cook the Bacon: While the chicken rests, cook the bacon in the same skillet (or a separate one) over medium heat until crispy. Remove the bacon from the pan and place it on a plate lined with paper towels to drain excess fat. Once cooled, chop the crispy bacon into small pieces.

Make the Caesar Dressing: In a medium bowl, combine the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and 1/4 teaspoon black pepper. Stir well until all ingredients are thoroughly combined and the dressing is smooth.

Prepare the Croutons: Cube the sourdough bread slices into small pieces. In the same skillet used for the bacon (reserving about 1 tablespoon of bacon fat, or add 1 tablespoon fresh olive oil), add the bread cubes. Drizzle with 1 tablespoon olive oil, sprinkle with 1/4 teaspoon garlic powder and 1/8 teaspoon salt. Toast the bread cubes over medium heat, stirring occasionally, until golden brown and crispy, about 5-7 minutes.

Chop the Lettuce: Chop the head of romaine lettuce into bite-sized pieces.

Assemble the Caesar Salad: In a large bowl, combine the chopped romaine lettuce, diced cooked chicken, chopped crispy bacon, and toasted croutons. Pour the prepared Caesar dressing over the salad ingredients. Toss everything together until the salad is well coated with the dressing.

Assemble the Sandwich: Take each baguette and slice it lengthwise, but not all the way through, to create a pocket. Fill each baguette generously with the prepared Chicken Caesar Salad. Garnish with additional shredded Parmesan cheese. Serve immediately.
