Add the egg yolk to a tall jar that is wide enough to accommodate your immersion blender.

Add the white vinegar, salt, and mustard powder to the jar with the egg yolk.

Carefully pour the 1 cup of avocado oil into the jar, on top of the other ingredients.

Insert an immersion blender into the bottom of the jar. Ensure the blade is fully submerged and resting firmly on the bottom of the jar.

Turn on the immersion blender and begin blending the mixture. Keep the blender stationary at the bottom of the jar until the mixture starts to emulsify and turn white, forming a thick base.

Once the bottom portion has emulsified, slowly and steadily lift the immersion blender upwards through the mixture. Continue to blend as you lift, incorporating all the oil until a light, airy, and fully emulsified mayonnaise forms.
