Add 100 grams of glutinous rice flour into a mixing bowl.

Add 50 grams of brown sugar to the glutinous rice flour in the bowl.

Pour 80 grams of boiling water into the mixture of flour and brown sugar.

Use chopsticks to mix the ingredients together until they are combined and a rough dough forms.

Begin kneading the dough by hand directly in the bowl. Once it comes together, transfer it to a clean work surface and continue kneading until a smooth and pliable dough is formed, about 5-7 minutes.

Divide the prepared dough into 6 to 7 equal portions.

Take each portion of dough, roll it into a ball, and then flatten it into a disc shape, about 1/2 inch thick.

Heat a non-stick pan over medium heat.

Add a small amount of cooking oil to the heated pan, just enough to lightly coat the bottom.

Carefully place the flattened mochi discs into the hot pan, ensuring not to overcrowd it. Cook in batches if necessary.

Pan-fry the mochi on one side until it becomes golden brown in color, about 2-3 minutes.

Flip each mochi disc to cook the other side until it is also golden brown and slightly puffed up, about another 2-3 minutes.
