Preheat your oven to 400°F (200°C). Cut the tops off the garlic pods, drizzle them with 1 tablespoon of olive oil, and season with salt and pepper. Wrap the garlic pods in foil and bake for about 35 minutes, or until they are soft.

In a bowl, combine the cut chicken pieces with 1 1/2 teaspoons of ginger garlic paste, 1 tablespoon of lemon juice, 1 1/2 teaspoons of kashmiri chilli powder, 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, 1/2 teaspoon of garam masala, 1/2 teaspoon of turmeric, salt to taste, and a little oil. Mix well to ensure the chicken is fully coated. Marinate for at least 30 minutes.

Heat a pan or skillet over high heat. Add a little oil if needed, then cook the marinated chicken until it is cooked through and lightly charred. Set the cooked chicken aside.

For the tikka masala sauce, heat a little oil in a pan. Sauté the sliced onion until it is soft. Add the chopped tomatoes, 1 teaspoon of ginger garlic paste, 1 teaspoon of kashmiri chilli powder, 1/2 teaspoon of coriander powder, 1/2 teaspoon of cumin powder, 1/4 teaspoon of garam masala, 1/4 teaspoon of turmeric, and salt to taste. Sauté for a few minutes, then cover the pan and cook until the tomatoes are completely soft and broken down.

Carefully transfer the cooked sauce mixture to a blender and blend until smooth. Return the smooth sauce to the pan, add 2 tablespoons of heavy cream, and cook for 1–2 minutes, stirring constantly. Finish the sauce by stirring in fresh cilantro or crushed kasuri methi.

Once the roasted garlic is cool enough to handle, squeeze the soft garlic pulp into the 1/4 cup of softened butter. Add 1 teaspoon of oregano, 3/4 teaspoon of dried parsley, 1 teaspoon of chilli flakes, 1/2 teaspoon of black pepper, and salt to taste. Mix all ingredients thoroughly to create the garlic spread.

To assemble the garlic bread, spread the prepared garlic butter generously over the large loaf of bread. Follow with a layer of the prepared tikka masala sauce, then a layer of mozzarella cheese. Distribute the prepared chicken tikka evenly over the cheese, and top with a little more mozzarella cheese.

Bake the assembled garlic bread in the preheated 400°F (200°C) oven for about 15 minutes, or until the cheese is melted and bubbly. For a golden and slightly crispy top, broil for an additional 2–3 minutes, watching carefully to prevent burning.

Garnish the chicken tikka garlic bread with fresh cilantro and serve hot.
