Season the chicken pieces with kosher salt and black pepper.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

Add the chopped yellow onion to the pot and cook until softened, about 3-4 minutes. Stir in the minced garlic and grated ginger and cook for another 1 minute until fragrant.

Add the rinsed jasmine rice to the pot and stir to coat with the aromatics. Cook for 1-2 minutes, stirring occasionally.

Pour in the full-fat coconut milk, chicken broth, and fish sauce. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot.

Return the browned chicken to the pot. Reduce the heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.

Remove the pot from the heat and let it rest, covered, for 5 minutes. Fluff the rice gently with a fork.

Stir in the fresh lime juice. Taste and adjust seasoning if necessary.

Serve hot, garnished with fresh chopped cilantro and red pepper flakes, if desired.
