Gather all fresh ingredients on a clean surface. Prepare the bell peppers by stemming, seeding, and roughly chopping them. Peel and roughly chop the ginger. Peel the garlic cloves and quarter the yellow onion.

Add the chopped red, green, and yellow bell peppers to a high-speed blender or food processor. Add the 6 Scotch bonnet peppers (or fewer, depending on your spice preference).

Add the large bunches of fresh herbs, including parsley, cilantro, green onion, basil, and thyme, to the blender. Add the peeled garlic cloves, chopped yellow onion, and peeled ginger pieces.

Add the pimento berries and all-purpose seasoning to the blender. Pour in the white vinegar and vegetable oil. Squeeze the juice from the fresh lime directly into the blender.

Secure the lid on the blender and begin to blend the ingredients. Start on a low setting and gradually increase the speed. Use a spatula to scrape down the sides of the container as needed to ensure all ingredients are incorporated and blend until the mixture is smooth but still retains a little texture.

Once blended to the desired consistency, pour the homemade green seasoning into a clean, airtight glass jar or container. Store in the refrigerator. The flavor will deepen and improve after a day or two.
