Finely dice the red onion and garlic.

Heat a pan over medium-high heat with a little oil. Add the diced onion, garlic, a pinch of salt, and the chilli flakes (if desired). Sauté until the onion is translucent and soft, about 5-7 minutes.

Add the tomato purée to the pan and cook for a couple more minutes, stirring constantly.

Pour in the vodka and allow it to simmer off for about 1 minute, letting the alcohol evaporate.

Reduce the heat to low and stir in the heavy cream. Let the sauce gently warm through.

Meanwhile, in a separate large pot, bring generously salted water to a rolling boil. Add the rigatoni and cook according to package directions, typically for 10 minutes, until al dente.

Before draining the pasta, reserve about 1 cup of the pasta cooking water. Add half a ladle (about 1/4 cup) of the reserved pasta water to the sauce, along with the grated Parmesan cheese. Stir until well combined and the cheese has melted into the sauce.

Drain the cooked rigatoni and add it directly to the sauce. Add the butter and stir thoroughly until the pasta is fully coated and the butter has melted.

Taste the sauce and adjust seasoning with more salt if needed. If the sauce is too thick, loosen it with a little more of the reserved pasta water, adding a tablespoon at a time until desired consistency is reached.

Serve the Spicy Vodka Rigatoni immediately. Garnish each serving with extra grated Parmesan cheese, cracked black pepper, fresh basil, and a drizzle of extra-virgin olive oil.
