Carefully add the marinated paneer cubes to the hot oil in batches, ensuring not to overcrowd the pan. Fry for 3-5 minutes, or until the paneer is golden brown and crispy on all sides. Remove the fried paneer with a slotted spoon and place it on a plate lined with paper towels to drain excess oil. Repeat with the remaining paneer.

In a separate large pan or wok, heat 2 tablespoons of vegetable oil over medium heat. Add mustard seeds and let them splutter. Then add curry leaves and green chilies and sauté for 30 seconds until fragrant.

Add ginger garlic paste to the pan and sauté for 1 minute until the raw smell disappears. Stir in red chili powder, cumin powder, and coriander powder, cooking for another 30 seconds.

Add tomato paste, soy sauce, vinegar, sugar, and salt to the pan. Mix well and cook for 1-2 minutes, allowing the flavors to meld. Pour in the water and bring the sauce to a gentle simmer.
