Prepare the chicken marinade: In a medium bowl, combine the chicken pieces, olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper. Toss to coat the chicken evenly. Cover and refrigerate for at least 15 minutes, or up to 30 minutes for more flavor.

While the chicken marinates, prepare the Tzatziki sauce: In a small bowl, combine the Greek yogurt, grated and squeezed cucumber, minced garlic, chopped fresh dill, lemon juice, and salt. Stir well to combine. Taste and adjust seasoning if needed. Cover and refrigerate until ready to serve.

Preheat a grill or grill pan to medium-high heat (about 400°F). Lightly oil the grill grates. Thread the marinated chicken onto skewers if desired, or cook directly on the grill.

Grill the chicken for 3-4 minutes per side, or until cooked through and no longer pink in the center, with nice char marks. Remove from heat and let rest for a few minutes.

Warm the pita bread: You can warm the pita bread directly on the grill for 30 seconds per side, in a dry skillet over medium heat, or in a microwave for 15-20 seconds until soft and pliable.

Assemble the gyros: Open each warm pita bread to create a pocket. Layer a base of shredded lettuce inside. Add a generous portion of grilled chicken, followed by sliced cucumber, red onion, cherry tomatoes, and yellow bell pepper.

Drizzle a generous amount of Tzatziki sauce over the fillings. Garnish with extra fresh dill and serve immediately with a lemon wedge on the side for squeezing.
