Prepare the Animal Style Sauce: In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, white vinegar, granulated sugar, and black pepper. Stir well until thoroughly combined. Cover and refrigerate until ready to use.

Prepare the Caramelized Onions: Melt butter in a large skillet or Dutch oven over medium-low heat. Add the chopped yellow onions and cook, stirring occasionally, for 25-30 minutes, or until deeply golden brown and very soft. If the onions start to stick, add a tablespoon or two of water to deglaze the pan. Remove from heat and set aside.

Prepare the Fries: Wash and peel the Russet potatoes. Cut them into 1/4-inch thick fries. Place the cut fries into a large bowl filled with ice and cold water. Let them soak for at least 30 minutes to remove excess starch. This helps achieve a crispier fry.

While fries are soaking, prepare the burger patties: Divide the ground beef into 8 equal portions (about 3 ounces each). Form each portion into a loose ball. Season generously with salt and black pepper.

Fry the Fries: Drain the soaked fries and pat them thoroughly dry with paper towels. Heat peanut oil in a large heavy-bottomed pot or deep fryer to 350°F. Fry the potatoes in batches for 5-7 minutes per batch, or until golden brown and crispy. Remove with a slotted spoon and place on a wire rack lined with paper towels to drain. Season immediately with salt.

Cook the Burgers: Heat a large cast-iron skillet or griddle over medium-high heat until very hot. Place the seasoned beef balls onto the hot surface and immediately smash them down with a sturdy spatula or burger press into thin patties, about 1/4-inch thick. Cook for 2-3 minutes until a crust forms and the edges are browned. Flip the patties.

Immediately place a slice of American cheese on top of each flipped patty. Cover the skillet with a lid or a metal bowl to help the cheese melt quickly. Cook for another 1-2 minutes, or until the cheese is fully melted and the patties are cooked through. Remove patties from the skillet and set aside.

Toast the Buns: In the same skillet, add the melted butter. Place the burger buns, cut-side down, in the skillet and toast for 1-2 minutes, or until golden brown. Remove from skillet.

Assemble the Animal Style Fries: Arrange a serving of hot fries on a plate. Top with 1-2 slices of American cheese, allowing the residual heat to slightly melt it. Spoon a generous amount of caramelized onions over the cheese, then drizzle liberally with Animal Style Sauce.

Assemble the Animal Style Burgers: Spread a generous amount of Animal Style Sauce on the bottom half of each toasted bun. Layer with 2 pickle slices, 1 lettuce leaf, and 1 tomato slice. Stack two cheeseburger patties on top of the tomato. Drizzle more Animal Style Sauce over the patties, then add a spoonful of caramelized onions. Place the top half of the toasted bun to complete the burger. Serve immediately with the Animal Style Fries.
