In a large bowl, combine the beef cubes with yogurt, ginger garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, 1/2 cup fried onions, 1/2 cup chopped coriander leaves, 1/4 cup chopped mint leaves, slit green chilies, sliced tomatoes, and salt to taste. Mix thoroughly until the beef is well coated.

Marinate the beef for at least 30 minutes. For enhanced flavor, you can marinate it longer in the refrigerator.

In a large pot, heat some oil over medium heat. Add the marinated beef to the pot.

Cook the beef on medium heat, stirring occasionally, until it is tender and the oil begins to separate from the masala. This process will take approximately 45-60 minutes.

While the beef is cooking, bring a large pot of water to a rolling boil. Add the green cardamoms, cloves, cinnamon sticks, bay leaves, and 1 tablespoon of salt to the boiling water.

Add the soaked basmati rice to the boiling water. Cook the rice until it is about 70% done, meaning it should still be slightly firm to the bite.

Drain the partially cooked rice and set it aside.

Warm 1/4 cup of milk. Add 1/4 teaspoon of saffron strands to the warm milk and let it infuse for a few minutes.

Once the beef is cooked, spread half of the cooked rice evenly over the beef in the pot.

Sprinkle 1/4 cup chopped coriander leaves, 1/4 cup chopped mint leaves, and some fried onions over the first layer of rice.

Add the remaining cooked rice on top of the herb and onion layer.

Pour the saffron milk evenly over the top layer of rice.

Drizzle 2 tablespoons of ghee or oil over the rice and scatter a few more fried onions on top for garnish.

Cover the pot tightly with a lid. If the lid is not airtight, you can seal it with dough to create a tight seal.

Cook on low heat for 15-20 minutes to allow the flavors to meld together and the rice to finish cooking through (this is known as 'dum cooking').

Once done, gently mix the biryani from the bottom up before serving to combine the beef and rice layers.
