Cook the wide rice noodles according to the package instructions. Once cooked, rinse them thoroughly with cold water to prevent sticking and set aside.

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced smoked sausage and cook until it is nicely browned and slightly crispy. Remove the sausage from the pan and set aside.

Add the peeled and deveined shrimp to the same pan. Sear the shrimp for 1-2 minutes per side until they are just cooked through and turn pink. Be careful not to overcook them. Remove the shrimp from the pan and set aside.

Add the corn rounds to the pan and cook for 3-4 minutes, stirring occasionally, until they are lightly charred. Then, add the broccolini and sliced red bell pepper. Cook for another 3-5 minutes until the vegetables are tender-crisp.

In a separate small saucepan or directly in the large skillet (if you have enough space), melt 4 tablespoons of butter over medium heat. Add 2 teaspoons of minced garlic and the optional 2 sliced Thai chilies. Sauté for about 30 seconds until fragrant.

Stir in the smoked paprika, Cajun seasoning, Old Bay, onion powder, garlic powder, and the optional pinch of cayenne. Cook for another 30 seconds, stirring constantly, until the spices are fragrant. Then, add the brown sugar, oyster sauce, fish sauce, soy sauce, and the juice of 1/2 lime. Whisk everything together until the sauce is well combined and slightly thickened.
Return the cooked noodles, sausage, shrimp, crab meat (or crab clusters), and the cooked vegetables (corn, broccolini, bell pepper) to the pan with the sauce. Toss everything together thoroughly until all the ingredients are evenly coated in the rich seafood boil sauce.

Serve immediately, garnished with the sliced green onions and an extra squeeze of fresh lime juice, if desired.
