In a microwave-safe bowl, combine the 100g white sugar, a splash of water, and 1 teaspoon of bicarbonate of soda.

Mix the ingredients thoroughly with a spoon until they are well combined.

Place the bowl into a microwave.

Microwave the mixture in 30-second intervals for a total of 2-3 minutes. Continue microwaving until the mixture turns a golden brown color, is bubbling vigorously, and has risen significantly. Keep a close eye on it to prevent burning.

Once microwaved, carefully remove the hot, bubbly mixture from the microwave. Be cautious as the bowl and contents will be very hot.

Immediately pour the golden-brown, bubbly mixture onto a baking sheet that has been lined with baking paper (parchment paper).

Using the back of a spoon or a spatula, quickly spread the mixture thinly and evenly on the baking paper. Work quickly as it will begin to set.

Allow the honeycomb to cool completely at room temperature until it becomes firm and hard. This can take approximately 30 minutes.

Once fully cooled and hardened, snap the honeycomb into desired pieces. You can break it into small shards or larger chunks.

Enjoy your honeycomb crunch as a sweet addition to low-calorie snacks, such as low-calorie ice cream.
