Pat the chicken pieces dry thoroughly with paper towels. This helps achieve a crispier texture.

In a large bowl, combine the dried chicken pieces with the cornflour, optional rice flour, paprika, lemon pepper seasoning, onion powder, garlic powder, black pepper, salt (adjusting to taste, especially if your lemon pepper seasoning is salty), and oil. Toss everything together until the chicken is evenly coated.

Cook the chicken using your preferred method until it is golden and crispy. If using an air fryer, preheat to 200°C and cook for 10-14 minutes. If using an oven, preheat to 220°C and cook for 18-22 minutes. If pan-frying, cook in a lightly oiled pan over medium-high heat until golden brown and cooked through.

While the chicken is cooking, prepare the hot sauce glaze. In a separate pan, melt the butter over medium heat. Add the minced garlic and cook for 20-30 seconds until fragrant, being careful not to burn it.

Stir in the chilli flakes, then add the hot sauce, lemon juice, and a pinch of salt. Stir well to combine all ingredients into a smooth glaze. Remove from heat.

Once the chicken is crispy and cooked, immediately add it to the pan with the hot sauce glaze. Toss the chicken pieces thoroughly to ensure they are well coated with the sauce.

Serve the hot sauce chicken immediately. Optionally, sprinkle with extra lemon pepper seasoning or squeeze fresh lemon juice over the top before serving for an added burst of flavor.
