In a large saucepan or pot, add the finely sliced onion. Cook over low heat for 30 minutes, stirring occasionally, until the onions are deeply caramelized and soft.

Add the butter to the caramelized onions. Increase the heat slightly to medium-low and continue to cook, stirring, until the butter is browned and fragrant.

Add the uncooked medium grain rice to the saucepan with the onions and butter. Toss the rice thoroughly, ensuring every grain is well coated with the flavorful mixture.

If using a rice cooker, transfer the rice and onion mixture to the rice cooker pot. If cooking on the stovetop, keep the mixture in the saucepan.

Pour in the vegetable stock, add the pinch of salt, and stir in the ground turmeric. Stir gently to combine.

Cook the rice according to your rice cooker's normal setting, or if cooking on the stovetop, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until all liquid is absorbed and rice is tender.

Once cooked, let the rice rest for 5 minutes (if stovetop) or allow the rice cooker to complete its cycle. Fluff with a fork.

Serve the Onion Buttered Rice hot, garnished generously with fried shallots.
