Drizzle the avocado oil over the bread pieces. Add the salt, pepper, garlic powder, and Italian seasoning. Toss well to ensure all bread pieces are evenly coated.

Spread the seasoned bread pieces in a single layer on the prepared baking sheet. Bake for 20 minutes, or until golden brown and crispy.

While the croutons are baking, prepare the dressing. Finely chop the anchovies and mince the garlic cloves. Combine them on a cutting board and continue chopping them together until a fine paste forms.
