Place the boneless, skinless chicken thighs in a bowl. Add the olive oil, harissa paste, smoked paprika, salt, and black pepper to the bowl. Mix thoroughly until the chicken is fully coated with the marinade.

Heat a large pan over medium-high heat on the stovetop. Place the marinated chicken thighs in the hot pan and cook for 5 to 7 minutes per side, or until the chicken is cooked through and has developed a slightly charred exterior.

Once cooked, remove the chicken from the pan and let it rest for 5 minutes. After resting, slice the chicken into thin strips.

Once toasted, spread the prepared harissa mayo generously on the un-buttered side of each bread slice. On two of the bread slices (mayo-side up), layer the sliced harissa chicken and arugula.

Top these with the remaining two bread slices, ensuring the mayo-side is down onto the chicken and arugula. Slice each assembled sandwich in half and serve immediately.
