Soak 1 cup (200g) chickpeas overnight (for at least 8 hours), then boil them until tender. This can take 45-60 minutes depending on the chickpeas. Set aside.

Heat 1 tablespoon oil in a pan over medium heat.

Add 1 teaspoon cumin seeds to the hot oil and let them splutter for about 30 seconds.

Add 1/2 cup (120g) chopped onion to the pan and sauté until it turns golden brown, about 5-7 minutes.

Add 1/2 cup (100g) chopped tomato and cook until it softens and the oil starts to separate, about 3-5 minutes.

Stir in 1 teaspoon ginger garlic paste and sauté for 1 minute until fragrant.

Add the dry spices: 1/2 teaspoon turmeric powder, 1 teaspoon coriander powder, 1/2 teaspoon red chili powder, 1/2 teaspoon cumin powder, and 1/2 teaspoon garam masala. Mix well and cook for 2 minutes, stirring constantly to prevent burning.

Add 1/4 cup cashew paste (prepared by blending soaked cashews with water) and mix thoroughly into the मसाला (masala). Cook for 2 minutes.

Pour in 1/2 cup water and mix to combine all ingredients, scraping any bits from the bottom of the pan.

Add the boiled chickpeas to the pan and mix them into the masala, ensuring they are well coated.

Cover the pan and let the mixture simmer for 5 minutes to allow the flavors to meld.

Stir in 1/4 cup fresh cream and mix gently until incorporated and the curry becomes creamy.

Add 1 tablespoon kasuri methi (dried fenugreek leaves) and mix well.

Finish by adding 2 tablespoons butter and 2 slit green chilies. Mix well until the butter has melted.

Garnish with fresh coriander before serving.

Serve the creamy masala chana hot with rice, naan, or roti.
