In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped yellow onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.

Pour in the vegetable broth. Add the grated ginger, sliced fresh mushrooms, dried shiitake mushrooms, nori sheet, tamari, and apple cider vinegar to the pot.

Bring the mixture to a rolling boil over medium-high heat.

Once boiling, reduce the heat to low, cover the pot, and let the broth simmer gently for 30 minutes to allow the flavors to meld.

Carefully strain the broth through a fine-mesh sieve into a clean pot or heatproof bowl to remove all the solids. Discard the solids.

Taste the strained broth and season with salt and pepper as needed.

Serve the healing mushroom broth hot, poured over cooked tortellini.
