Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and no longer pink, about 5-7 minutes. Drain any excess fat from the skillet.

Add the sliced yellow onion and green bell pepper to the skillet with the cooked ground beef. Sauté for 8-10 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized.

Stir in the minced garlic, Worcestershire sauce, salt, and black pepper. Cook for another 1-2 minutes until fragrant.

Reduce the heat to low. Arrange the provolone cheese slices over the top of the beef and vegetable mixture. Cover the skillet with a lid or aluminum foil and let the cheese melt for 2-3 minutes, until gooey and bubbly.

While the cheese is melting, lightly brush the cut sides of the hoagie rolls with melted butter. You can toast them in a separate pan, under the broiler, or in a toaster oven until golden brown, about 2-3 minutes. Watch carefully to prevent burning.

Divide the cheesy beef and vegetable mixture evenly among the toasted hoagie rolls. Serve immediately.
