Add the maple syrup, unsweetened applesauce, and 1/4 cup of water to the dry ingredients. Mix with a spatula or whisk until a smooth batter forms. If the batter is too thick to pipe, add an additional tablespoon of water at a time until it reaches a pipeable consistency.

Transfer the donut batter to a piping bag (or a large zip-top bag with a corner snipped off). Pipe the batter evenly into the prepared donut mold cavities, filling each about two-thirds full.
