Add the broccoli leaves to the pan. Continue to stir-fry until the leaves are wilted, about 1-2 minutes. Move the cooked vegetables to one side of the pan.

Pour the beaten eggs into the empty side of the pan. Scramble the eggs until just set, then combine and scramble them together with the garlic and broccoli. Once everything is scrambled and cooked, remove the mixture from the pan and set it aside with the chicken.

Add the flat, wide rice noodles to the pan. Pour the previously prepared sauce over the noodles. Toss everything together vigorously, ensuring the noodles are fully combined and evenly coated with the sauce. Cook for 2-3 minutes, allowing the noodles to absorb the sauce and develop a slight char.

Return the cooked vegetables and scrambled egg to the pan. Add the cooked chicken back into the pan. Give all the ingredients a final toss to ensure they are well combined and heated through.

Once done, plate the Pad See Ew into serving bowls. Garnish with chopped chives and chili flakes as desired. Serve immediately and enjoy!
