Place the cooked and cooled chicken breasts into the bowl of a KitchenAid stand mixer fitted with the whisk attachment. Turn the mixer on to a medium-low speed and allow it to shred the chicken until it is finely pulled apart. This should take about 2-3 minutes.

Using a small grater, finely grate the celery and red onion (or shallot) into a separate bowl. Ensure they are very finely grated to integrate smoothly into the salad.

Add the finely grated celery and red onion to the shredded chicken in the stand mixer bowl. Pour in the white vinegar (or fresh lemon juice).

Add the Duke's Real Mayonnaise to the mixture in the stand mixer. Also, add the kosher salt and freshly ground black pepper.

Run the stand mixer again on a medium-low speed until all ingredients are thoroughly combined and the chicken salad is creamy and well-mixed. Scrape down the sides of the bowl as needed to ensure even mixing.

Taste the chicken salad and adjust seasoning (salt and pepper) if necessary. Serve immediately or transfer to a clear plastic container for storage in the refrigerator. It is best served chilled.
