Start by heating up a large stew pot on a medium-high heat.

Add the avocado oil to the pot. After 1 minute, add the brown sugar.

Stir frequently until the brown sugar caramelises deeply to a golden brown colour.

Add the finely diced red onion, diced green pepper, and diced celery to the pot. Cook for 5 minutes, stirring occasionally.

Now, add the sofrito (green seasoning) and cook for a few minutes, stirring.

Add the Badia adobo seasoning (or your favourite all-purpose seasoning), black pepper, cayenne pepper, and dried oregano. Cook for a further 1 minute, stirring constantly.

Now, add the coconut milk and chicken broth, and mix well.

Season to taste with salt, then cover the pot and cook for 10 minutes.

Once you’re happy with the flavour, add the par boiled long grain rice and drained and rinsed cooked pigeon peas to the pot.

Cover the pot and cook for 10 minutes on a low heat.

Remove the pot from heat and let it steam for a further 15 minutes with the lid on.

Now, remove the lid and fluff up the rice with a fork, then serve and enjoy!
