In a small bowl, combine the plain Greek yogurt, honey, vanilla extract, and optional lemon zest. Whisk until thoroughly combined and smooth. Cover and refrigerate while you prepare the fruit.

Wash all the fruit thoroughly. Prepare each fruit as specified in the ingredients list: hull and quarter strawberries, halve red grapes, cube pineapple and cantaloupe, peel and slice kiwi, and leave green grapes and blueberries whole.

Carefully thread the prepared fruit onto the wooden skewers, creating a rainbow pattern. A suggested order is red (strawberries, red grapes), orange/yellow (cantaloupe, pineapple), green (kiwi, green grapes), and blue/purple (blueberries). Repeat the pattern until all fruit is used or skewers are full.
