Add the 200 grams of pitted Medjool dates to a food processor. Process until a sticky paste forms.

Add the 100 grams of almonds and 50 grams of walnuts to the food processor with the date paste. Process again until the nuts are finely chopped and well combined with the date paste.

Add the 30 grams of cocoa powder and 2 tablespoons of chia seeds to the mixture in the food processor.

Add the 2 tablespoons of maple syrup (or honey) to the food processor. Process until all ingredients are well combined and the mixture forms a cohesive dough.

Transfer the mixture to a baking tray lined with parchment paper.

Press the mixture down firmly and evenly into the tray to form a compact layer.

Melt the 50 grams of dark chocolate. Drizzle the melted chocolate evenly over the top of the pressed mixture in the tray.

Sprinkle a pinch of sea salt over the chocolate topping.

Place the tray in the fridge for at least 1 hour to chill and allow the bars to set.

Once chilled, remove the slab from the tray and cut it into bars or squares of your desired size.
