Place the peeled and cut potatoes into a large pot. Cover with cold water and add 1 teaspoon of salt. Bring to a boil over high heat.

Reduce heat to medium and boil the potatoes until they are cooked through and tender when pierced with a fork, about 15-20 minutes.

While the potatoes are boiling, prepare the herbs and onion. Finely chop the 4 scallions, 1 small sweet white or red onion, 1 tablespoon of chives, and 2 tablespoons of parsley.

Once the potatoes are cooked, drain them thoroughly. Mash the potatoes directly in the pot while they are still hot until smooth or to your desired consistency.

Transfer the mashed potatoes to a large mixing bowl. Add the chopped sweet white/red onion, chopped scallions, chopped parsley, and chopped chives to the hot mashed potatoes.

Add the 5 tablespoons of mayonnaise to the mixture. Season with salt and white pepper to taste. If desired, add 1 tablespoon of salad cream.

Mix all ingredients thoroughly with a wooden spatula or large spoon until well combined and the herbs and mayonnaise are evenly distributed throughout the potatoes.

The Irish mammy potato salad can be served warm immediately, or for best results, cover and refrigerate for at least 1 hour to chill and allow the flavors to meld.

Serve, optionally garnished with more fresh herbs. Enjoy!
