In a bowl, combine the mayonnaise, chopped capers, chopped gherkins, chopped fresh dill, and the juice from 1/2 lemon. Season with salt and pepper to taste. Mix all ingredients well until combined. Set aside.

Pat dry the cod (or your chosen white fish) thoroughly with paper towels. Cut the fish into desired burger-sized portions. Season the fish with salt and pepper.

In a separate bowl, whisk together the all-purpose flour, baking powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Gradually whisk in the beer until a smooth batter forms.

Heat oil in a pan to 170°C (340°F).

Dip each piece of seasoned fish into the prepared batter, ensuring it is fully coated.

Carefully place the battered fish into the hot oil. Fry for 3-4 minutes per side, or until the fish is golden brown and crispy.

Remove the fried fish from the oil and place it on a wire rack lined with paper towels to drain any excess oil.

Toast the burger buns.

Spread a generous amount of the homemade tartare sauce on both halves of the toasted bun.

Layer with fresh lettuce. Place the crispy fried fish on top of the lettuce. Add optional cheese and pickles. Top with the other half of the bun to complete the burger.
