Bring a large pot of salted water to a rolling boil. Add the Trader Joe's Organic Spaghetti and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining the spaghetti.

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the sliced Trader Joe's Chicken Sausage and cook for 5-7 minutes, stirring occasionally, until lightly browned and heated through. Remove the sausage from the skillet and set aside.

In the same skillet, add the halved Trader Joe's Cherry Tomatoes. Cook for 3-5 minutes, stirring occasionally, until they begin to soften and burst slightly. Add the Trader Joe's Baby Spinach and cook until wilted, about 2-3 minutes.

Return the cooked chicken sausage to the skillet with the tomatoes and spinach. Add the drained spaghetti, Trader Joe's Genova Pesto, and 1/4 cup of Trader Joe's Grated Parmesan Cheese. Toss everything together until well combined.

If the pasta seems a bit dry, add some of the reserved pasta water, 1-2 tablespoons at a time, until it reaches your desired consistency. Season with salt and black pepper to taste.

Serve immediately, garnished with additional Trader Joe's Grated Parmesan Cheese if desired.
