Heat a wok or large pan over medium-high heat. Add 1 tablespoon of oil.

Once the oil is hot, add 1 tablespoon of minced garlic and stir-fry for 30 seconds until it becomes fragrant.

Push the garlic to one side of the pan to create an empty space. Crack 1 egg into the empty side and scramble it until cooked.

Add 100 grams of your chosen protein (such as chicken, beef, tofu, or shrimp) to the pan and stir-fry until it is cooked through.

Add 50 grams of Chinese broccoli to the pan and stir-fry for 1-2 minutes until it is slightly tender-crisp.

Add 150 grams of fresh wide rice noodles to the pan.

In a separate bowl, combine all the sauce ingredients: 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 1 tablespoon dark soy sauce, 1 teaspoon sugar, 1 teaspoon white vinegar, and 1/2 teaspoon white pepper. Mix well.

Pour the prepared sauce mixture over all the ingredients in the pan.

Stir-fry everything together, ensuring the noodles are thoroughly coated with the sauce and heated through. Continue cooking until the sauce has caramelized slightly.

Serve the Pad See Ew immediately.

Optionally, garnish with chili crisp before serving.
