In a large pot or deep skillet, add 1 tablespoon of olive oil. Add the diced yellow onion, green bell pepper, and celery. Sauté the vegetables over medium heat until they are softened, about 5-7 minutes.

Add the 2 cloves of minced garlic to the pot and cook for another minute, stirring frequently, until fragrant.

Add the 1 (14.5 oz) can of undrained diced tomatoes, 1 (15 oz) can of rinsed and drained cannellini beans, and 1/2 cup of vegetable broth to the pot. Stir to combine all ingredients.

Stir in 1 tablespoon of Cajun seasoning, 1/2 teaspoon of dried thyme, 1/4 teaspoon of cayenne pepper, 1/4 teaspoon of black pepper, and 1/4 teaspoon of salt. Mix well to distribute the seasonings.

Bring the mixture to a simmer, then reduce the heat to low and cook for 15-20 minutes, stirring occasionally, until the filling has thickened. Remove from heat and let cool slightly.

While the filling is simmering, preheat your oven to 400°F (200°C). Unroll the thawed puff pastry onto a lightly floured surface. Cut the puff pastry into 6 equal squares.

Spoon the prepared Cajun-inspired filling onto one half of each puff pastry square.

Sprinkle each filled pastry half with 1/2 cup of vegan cheddar cheese shreds, dividing evenly among the 6 squares.

Fold the other half of the puff pastry over the filling to create a triangular shape. Use a fork to crimp the edges of each hand pie, sealing them tightly.

Transfer the assembled hand pies to a baking sheet lined with parchment paper.

Brush the tops of the hand pies with 1 tablespoon of plant milk to help them brown.

Bake the hand pies in the preheated oven at 400°F (200°C) for 15-20 minutes, or until they are golden brown and puffed up.

Garnish the baked hand pies with fresh parsley and serve warm.
