Wash the English cucumbers thoroughly and trim off both ends.

Slice the cucumbers into rounds approximately 1/4-inch thick. Aim for even slices for best results.

Using a small star-shaped cookie cutter (about 1 1/2 to 2 inches wide), cut out star shapes from the center of each cucumber slice. You can discard the scraps or save them for another use, like adding to a salad.
