In a large bowl, combine the 500 grams of plain flour, 250 ml of water, and 10 ml of salt. Mix the ingredients together with your hands until a shaggy dough forms.

Transfer the dough to a clean surface and knead it for 10 minutes until it becomes smooth and elastic.

Cover the kneaded dough and let it rest for 30 minutes.

After resting, roll out the dough using a rolling pin until it is very thin, approximately 2mm thick.

Fold the thinly rolled dough multiple times, creating several layers.

Using a knife, cut the folded dough into thick strips, approximately 2cm wide.

Carefully unfold each noodle strip. Then, gently stretch each noodle by hand to lengthen and thin it slightly.

Heat 150 ml of oil in a small pan until it is smoking hot.

In a heatproof bowl, combine 1 tablespoon of chili flakes, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, the minced 2 cloves of garlic, and 1 tablespoon of chopped chives.

Carefully pour the smoking hot oil over the ingredients in the bowl. It should sizzle vigorously, cooking the aromatics and chili flakes.

Add 1 tablespoon of soy sauce and 1 tablespoon of vinegar to the bowl with the hot oil mixture. Mix all the sauce ingredients well.

Bring a pot of water to a rolling boil. Add the stretched noodles and boil until they are cooked through, approximately 3-5 minutes depending on thickness.

Once cooked, drain the noodles thoroughly.

Place the hot, drained noodles into a serving bowl. Pour the prepared chili oil sauce over the noodles. Garnish with additional chopped chives, if desired, and serve immediately.
