Preheat your oven to 200°C (390°F). Deeply score the salmon by making diagonal cuts on the skin side.

Prepare the wrapping: Lay out a sheet of aluminum foil, then place a sheet of parchment paper directly on top of it. Drizzle and spread a little olive oil evenly onto the parchment paper. Place the deeply scored salmon, skin side down, on the oiled parchment paper.

Prepare the sauce ingredients: In a mixing bowl, combine the finely chopped coriander, basil, ginger, garlic, and red chilli. Add the 3 tablespoons of soy sauce, 2 tablespoons of sweet chilli sauce, 1 tablespoon of agave syrup, 1 tablespoon of sesame oil, and 1 tablespoon of olive oil. Grate 1/2 of a lime peel directly into the bowl. Season the mixture with crushed black pepper and a little salt, being cautious with the salt due to the soy sauce content. Mix all ingredients very well with a spoon until a uniform sauce is obtained.

Brush the prepared sauce generously onto the salmon, ensuring it is spread into the scored cuts and covers the entire top surface of the fish.

Close the fish by carefully folding the parchment paper and aluminum foil over it, creating a sealed packet. Ensure there is a little space between the salmon and the parchment sheet. Crimp all the edges of the foil and parchment paper to securely seal the packet.

Place the sealed fish packet onto a baking tray. Put the tray with the fish packet into the preheated oven and bake for 25 minutes.

Once baked, carefully open the papillote (watch out for steam!) and serve the salmon hot. Enjoy!
