Preheat your oven to 350°F (180°C). Grease your chosen baking pan (a 9x13 inch pan is recommended).

In the greased baking pan, add the 3 very ripe bananas, 3/4 cup date molasses (or silan or maple syrup), 1/2 cup avocado oil, and 1 teaspoon vanilla extract.

Mix these wet ingredients thoroughly until well combined. You can use a fork or a whisk for this step.

To the pan with the wet ingredients, add the 1 1/2 cups self-rising flour (or your chosen alternative flour with baking powder), 1/2 teaspoon salt, 1 teaspoon baking soda, and 1 tablespoon cinnamon.

Mix all ingredients just until the batter is smooth. Be careful not to over-mix, as overworking the flour can develop gluten, resulting in a dense cake rather than a soft and tender one.

If desired, sprinkle the optional chocolate chips, slivered almonds, and/or whole open dates over the top of the batter.

Place the pan in the preheated oven. Bake for approximately 30 minutes if using a 9x13 inch pan, or about 45 minutes if using a loaf pan. Baking time may vary depending on the pan size and oven. The cake is ready when a toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool slightly before serving. Enjoy this delicious eggless, no refined sugar banana date cake for breakfast or as an afternoon snack with coffee.
