In a medium bowl, combine the sliced beef strips with 2 tablespoons of soy sauce, the beaten egg, and 3 tablespoons of cornstarch. Mix thoroughly until all the beef strips are well coated. Set aside.

Preheat your air fryer to 200°C (400°F). Place the coated beef strips in a single layer in the air fryer basket, ensuring not to overcrowd it. You may need to cook in batches. Spray generously with cooking oil spray.

Air fry the beef for 10-15 minutes, shaking the basket halfway through, until the beef is crispy and golden brown. Repeat with any remaining beef. Once cooked, remove and set aside.

While the beef is air frying, prepare the chilli sauce. In a small bowl, whisk together 4 tablespoons of soy sauce, 3 tablespoons of sweet chili sauce, 2 tablespoons of ketchup, and 1 tablespoon of honey until well combined.

Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat. Add the sliced onion, red bell pepper, and green bell pepper. Sauté for 3-5 minutes until the vegetables begin to soften.

Add the minced garlic, chopped spring onions, and sliced red chilies to the pan. Stir-fry for another 1-2 minutes until fragrant.

Pour the prepared chilli sauce into the pan with the vegetables and bring to a gentle simmer. Add the cooked egg noodles and the air-fried crispy beef to the pan.

Toss everything together until the noodles, beef, and vegetables are evenly coated in the sauce. Serve immediately in bowls, garnished with fresh chopped cilantro and sesame seeds.
