Preheat a grill or grill pan to medium-high heat. Lightly brush the pineapple slices with 1 tablespoon of olive oil.

Place the pineapple slices on the preheated grill. Grill for 3-4 minutes per side, or until grill marks appear and the pineapple is slightly softened and caramelized. Remove from grill and let cool slightly.

Once cooled, finely dice the grilled pineapple. Transfer the diced pineapple to a medium-sized bowl.

Add the finely diced red onion, red bell pepper, minced jalapeño, and chopped fresh cilantro to the bowl with the pineapple.

Pour in the fresh lime juice, and season with salt and black pepper. Gently stir all ingredients together until well combined.

Taste the salsa and adjust seasoning as needed. Serve immediately with plantain chips.
