In a medium bowl, combine the ground chicken, 1/2 cup chopped green onion, grated ginger, 2 tablespoons soy sauce, 1 teaspoon sesame oil, white pepper, and egg. Mix all ingredients thoroughly until well combined. This is your dumpling filling.

Lay out several wonton wrappers on a clean, flat surface. Place a small amount (about 1 teaspoon) of the chicken filling mixture in the center of each wrapper.

To form each dumpling, fold one corner of the wonton wrapper over the filling to the opposite corner, creating a triangle. Firmly press the edges to seal. Then, bring the two side corners of this triangle together and pinch them firmly to seal, creating a tortellini-like dumpling shape.

Arrange the assembled dumplings side-by-side in a large non-stick pan, ensuring they do not overlap too much.

Pour 1/2 cup of chicken broth into the pan with the dumplings.

Cover the pan with a lid and cook over medium-high heat for 5 minutes. The dumplings will steam and cook through.

While the dumplings are cooking, prepare the sauce. In a separate small bowl, combine 2 tablespoons soy sauce, rice vinegar, honey, chili garlic sauce, sesame seeds, and 1 tablespoon chopped green onion. Stir well to mix all the sauce ingredients.

After 5 minutes, remove the lid from the pan. The liquid should have mostly evaporated and the dumplings should be cooked.

Pour the prepared sauce over the cooked dumplings in the pan. Toss the dumplings gently to ensure they are evenly coated with the sauce. Serve immediately and enjoy!
