Take the skinless chicken thighs and place them on a cutting board. Cut the chicken thighs into bite-sized pieces, approximately 1-inch cubes or strips. Transfer the cut chicken into a mixing bowl.

Add 30mL of soy sauce, 6g of sesame oil, 40g of sugar-free maple syrup, 20g of garlic paste, 1 teaspoon of onion powder, and 1/2 teaspoon of black pepper to the bowl with the chicken.

Add 1 teaspoon of sesame seeds to the bowl. Mix all the ingredients thoroughly with a spoon until the chicken is well coated. Let the chicken marinate for at least 30 minutes.

Preheat your air fryer to 390°F. Once preheated, arrange the marinated chicken pieces in a single layer in the air fryer basket. Cook the chicken for a total of 12 minutes.

At the halfway point (around 6 minutes), open the air fryer and shake the basket to toss the chicken pieces, ensuring even cooking and browning.

Continue air frying for the remaining time until the chicken is fully cooked and slightly caramelized.

Remove the cooked chicken from the air fryer. The chicken can be portioned into meal prep containers or served immediately. It pairs well with rice and kimchi, garnished with chopped green onions and additional sesame seeds.
