Cut the pork belly lengthwise into strips, approximately 1 1/2 to 2 inches wide and 1/2 inch thick. Score the skin side deeply and the meat side lightly.

In a medium bowl, combine the banana ketchup, soy sauce, calamansi juice (or lemon/lime juice), minced garlic, black pepper, and kosher salt to create the marinade. Mix well until all ingredients are thoroughly combined.

Place the cut pork belly into a container or a large resealable bag. Pour the prepared marinade over the pork belly, ensuring it is evenly coated. Massage the marinade into the pork. Cover the container or seal the bag and refrigerate for at least 3 hours, or preferably overnight, to allow the flavors to meld.

While the pork is grilling, prepare the toyomansi sauce. In a small bowl, combine 1/3 cup soy sauce, calamansi juice (to taste), and the 1-2 chopped thai chili peppers. Stir well.

Once the grilled pork belly is cooked, remove it from the grill and let it rest for a few minutes before slicing it into serving pieces.

Serve the Filipino Style Grilled Pork Belly hot with the prepared toyomansi sauce, white rice, and fresh vegetables such as sliced cucumber.
