Prepare the apples by coring and cutting them into eighths. There's no need to peel them, as the Instant Pot will soften the skins sufficiently for blending.

Add the cut apples to the inner pot of an Instant Pot.

Pour 1/2 cup of water over the apples.

Add 1 teaspoon of cinnamon and 1 teaspoon of vanilla extract to the pot with the apples and water.

Secure the lid on the Instant Pot and ensure the sealing valve is set to "Sealing."

Select the "Pressure Cook" or "Manual" setting and set the cooking time to 10 minutes on "High Pressure."

Once the cooking cycle is complete, allow for a natural pressure release. This will take approximately 10-15 minutes.

Carefully open the Instant Pot lid. Use an immersion blender to blend the cooked apples directly in the pot until a smooth consistency is achieved. Alternatively, you can transfer the apples to a regular blender and blend until smooth.

Select the "Sauté" function on a "low setting" and set the timer for 30 minutes. This will help to thicken the apple butter.

Stir the apple butter frequently during the sauté process to prevent sticking to the bottom of the pot and to allow it to thicken evenly. Continue until the apple butter has reached your desired thickened consistency.

Once the apple butter has reached the desired consistency, turn off the Instant Pot. It is now ready to be spooned into clean jars for storage. Allow it to cool completely before refrigerating.
