In a large bowl, combine the cut chicken pieces, 1 teaspoon salt (or to taste), 1 tablespoon smoked paprika powder, 1 teaspoon garlic powder, 1/2 teaspoon black pepper, 1 teaspoon Cajun seasoning, and 1 tablespoon oil. Mix thoroughly until the chicken is evenly coated.

In a separate medium bowl, combine 1/2 cup mayonnaise, 1/2 cup sour cream, 1 tablespoon smoked paprika powder, 1 teaspoon garlic powder, salt and pepper to taste, 1 teaspoon Cajun seasoning, 1 tablespoon lime juice, 1 teaspoon hot sauce, and 1 to 2 tablespoons fresh chopped cilantro. Mix well until all ingredients are thoroughly combined.

Preheat your oven to 400°F.
Lightly brush one side of each of the 10 mini flour tortillas with 2 tablespoons of oil.

Flip the tortillas over so the un-oiled side is facing up. Spoon a generous amount of the prepared chicken filling onto the center of each tortilla.

Sprinkle about 1 cup of mixed shredded cheese (mozzarella and cheddar recommended) over the chicken filling on each tortilla.

Carefully fold or gently press the tortillas closed, creating a taco shape. You can use toothpicks to secure them if desired, though it's not strictly necessary for baking.

Arrange the assembled tacos in a single layer on a baking sheet.

Bake for 10 to 15 minutes, or until the tortillas are crispy and golden brown, and the cheese is completely melted and bubbly.
